Place the skillet over medium heat and add the 2 tablespoons of extra virgin olive oil. Let the oil heat up for a minute or two. You’ll know it’s ready when it shimmers slightly or a drop of water sizzles instantly.

Carefully place the seasoned chicken thighs into the hot skillet. You should hear a satisfying sizzle. Be sure not to overcrowd the pan; if necessary, work in two batches to ensure each piece has enough space to brown properly. Cook the chicken undisturbed for 5 minutes on the first side. Resisting the urge to move it around is key to developing that gorgeous, golden-brown crust.

After 5 minutes, use tongs to flip the chicken thighs over. Immediately reduce the heat to medium-low. This change in temperature is important: the initial high heat was for searing, and this lower heat will allow the chicken to cook through to the center without burning the outside. Continue to cook for another 5-7 minutes. The most reliable way to check for doneness is with a digital meat thermometer. Insert it into the thickest part of a thigh; it’s perfectly cooked when it registers 165°F (74°C).

Once cooked, transfer the chicken from the skillet to a clean plate. Tent the plate loosely with aluminum foil to keep the chicken warm while you prepare the sauce. Do not wipe out the skillet! The browned bits (called “fond”) and chicken juices left in the pan are packed with flavor and will form the base of our incredible sauce.

Step 4: Build the Jalapeno Peach Pan Sauce

With the chicken resting, it’s time to build the sauce right in the same skillet.

Increase the heat back up to medium. Add the thinly sliced jalapeno peppers to the skillet. Cook them for about 3 minutes, stirring occasionally. This step softens the jalapenos and tames their raw bite while allowing their spicy flavor to bloom in the residual chicken fat.

Next, add the fresh peach slices to the skillet with the jalapenos. Continue to cook for another 3 minutes, stirring gently. You want the peaches to soften and get slightly caramelized at the edges, but not turn into complete mush. They should still have some texture.

Step 5: Glaze and Bring It All Together

Now for the grand finale. Pour the prepared peach glaze mixture directly into the skillet over the jalapenos and peaches. As the glaze heats up, it will begin to bubble and thicken. Use a wooden spoon or spatula to stir everything together, ensuring every slice of peach and jalapeno is evenly coated. As you stir, gently scrape the bottom of the pan to lift up all those flavorful browned bits left behind by the chicken. They will dissolve into the glaze, adding immense depth.

Finally, return the cooked chicken thighs (and any juices that have accumulated on the plate) back to the skillet. Nestle them into the sauce. Spoon the luscious glaze, along with the peaches and jalapenos, over the top of each chicken thigh. Let everything simmer together for 1-2 minutes, just long enough for the chicken to heat through and absorb some of the glaze’s flavor.

Serve immediately, spooning extra sauce, peaches, and jalapenos over each portion.
